Spicy Brown Butter Sweet Potatoes

Ingredients:
4 medium-sized sweet potatoes
3 tablespoons unsalted butter
2 tablespoons Hillside Harvest Original Hot Pepper hot sauce
1 tablespoon olive oil

Instructions:
- Preheat the oven to 400°F with a rack set in the center. Line a baking sheet with parchment paper.
- Prick the sweet potatoes all over with the tines of a fork, then rub them evenly with the olive oil and a pinch of salt. Set the potatoes on the baking sheet and roast until the potatoes are very tender — a fork will slide into the potato easily with no resistance — about 45 minutes.
- Meanwhile, heat the butter in a small pot over medium heat. Cook, whisking occasionally, until the butter foams and browns, 4 to 6 minutes. (The browned bits at the bottom should be about the same color as milk chocolate — that’s where all the flavor is.) Remove the browned butter from the heat. Whisk in the Hillside Harvest Original Hot Pepper hot sauce and a pinch of salt.
- Transfer the cooked sweet potatoes to a serving plate. Slit the sweet potatoes lengthwise across their tops and use two forks to open them up a bit. Drizzle the spicy browned butter all over and inside the sweet potatoes. Enjoy warm.
